Black Cod, Favas & Duckhorn

So…sigh..I wish I lived on TV. Or at least in Foodnetwork land where you have a minion following you around and re-cooking all the screw-ups to make them beautiful for all the people out there watching. People who think…that’s so easy and it only took less than 30 minutes to make and hmmmm I’ll be very fabulous if I make that for my dinner party tomorrow!

Alas, I do not.

This blog is on how to resurrect  the screw ups.

First I bought fresh black cod today. LOVE it. Always make it with Miso. Always have Miso in the fridge.

I get home and lo and behold what do you know…NO miso in the fridge.


It is 4:45pm and the babysitter is leaving and I am not gonna get Wyatt and make him go on a miso hunt with me.

Not happening. Plan B.

The internet…duh da da daaaahhhh…anyway I find a good black cod substitute recipe and we are off.

Next flub..I went to the farmers market yesterday and hurriedly  bought fresh beautiful produce. Hurriedly because I have my wanting to be independent almost 3 year old accompanying me and he REFUSES to hold my hand. So…I don’t want him to get kidnapped…no Amber alerts for us…so I grab everything beautiful and edible within arms reach and we are off to the cupcake store.

I bought beautiful produce. What I thought were small red fingerling potatoes turned out to be small red sweet potatoes. I way over roasted them tonight. Scraped the black off and they were fine…

In short, dinner was a bit of a throw together and not the elegant feast I was hoping for. Still pretty good though.

Here is what we had:

Roasted Black Cod with leeks and cider butter-recipe from the internet

Fava bean and micro greens and arugula with lemon juice and olive oil-I love fava beans but they can be somewhat of a pain to prepare. I am going to do a separate page on preparing them.

Roasted fingerling sweet potatoes.

Duckhorn Sauvgnon Blanc.

If all else fails…open more wine!!!


Strip and shuck favas

Parboil beans (about 2mins)

Peel or pop beans out of waxy covering

Put in bowl and season with S&P and Olive oil

Baby Fingerling Sweet Potatoes:

Wash and peel as needed.

Parboil and slice in half

Put on oiled backing sheet and roast for about 15 mins if using convection check after 10

Black Cod:

1 8-10oz fillet black cod

3 leeks washed and sliced whited and light green parts only

1 sweet onion sliced thin

1-2 cloves garlic

Olive Oil

Sparkling cider or cider vinegar

Preheat oven to 375

Saute leeks, onions and garlic (if u want) in butter about 10 mins on low add salt

Add about 1 cup sparkling cider and reduce almost all the way

Place in casserole and add fillet on to, drizzle wit olive oil and S&P and put some leeks on top

Roast for 10-15 mins depending on how done  you want it


Whatever fresh greens you like and have on hand

Fava beans

Dry cheese like parm, or pecorino


High quality Olive Oil

Lemon zest

Lemon Juice and olive oil
