Monday night 5 pm. I have just picked up a starving kid from flag football. He’s behaving as if I haven’t fed him in days, never mind that he had a huge lunch only a few hours earlier. Regardless, the minute I pick him up the barage begins: What’s for dinner?” How long until dinner? Can I just have a snack?”
So. I need to think fast because we still have to hit the grocery store! Haha. So here’s the fast and fun solution that is a pretty big winner at my house. Chicken sliders. I make these all sorts of different ways but they seem to do the trick every time.
Tonight I made one for me too. I like mine a little more fancy than my son does so I made a pesto mayo and added some oven roasted tomatoes to mine and I do have to say it was really satisfying. So these work for adults too.
Here’s what you will need:
- 1lb ground chicken or turkey
- 2-3 scallions green and white parts
- 1-2 TSP tomato paste
- Smoky Paprika
- 2 TBS milk
- 1/4 bread crumbs or panko
- 2 TBS pesto (optional)
- 1 TBS Mayo (optional)
- Oven roasted or sun dried tomatoes (optional)
- Brioche slider buns (or other buns of your choice)
- Butter for buns
- Olive oil for frying chicken burgers
Put ground chicken or turkey in a large bowl. To that add scallions, tomato paste, S&P, paprika, milk and bread crumbs. Mix well and make a small patty to test seasoning. Fry test patty & taste. If you need to adjust seasoning.
While chicken burgers are frying butter your buns and broil until golden brown. If using make pesto mayo. Just mix pesto and mayo together.
Fry burgers about 3 or 4 mins per side depending on how big they are. Do not under cook. When done. Season lightly with salt and assemble burgers to your liking.
