02 Aug Burgers!
So here’s the story, there are many days when friends ask me what I am cooking for dinner or to share a recipe with them. I set this blog up so I could share thoughts, recipes and ideas with friends and family and so you guys can comment back with your own thoughts or suggestions.
The first post is about burgers. Burgers have been on my mind alot lately. I love me a good cheeseburger!! I grew up in a beautiful part of Florida near a small Island called Anna Maria Island (forever to be referred to as AMI). On AMI we have a famous burger joint that I have been going to all my life,Duffy’s Tavern. Duffy’s was recently written up in the NY Times, that’s how good it is! Now I live in Northern California and I can’t just pop into Duffy’s to fulfill my burger cravings. I like thin burgers and In N Out is a good option in a pinch but it just isn’t the same. I decided to try and re-create as closely as possible the Duffy Burger.
I started with ground sirloin. I know burger traditionalists will tell you that ground sirloin isn’t fatty enough to make a juicy burger but I really like the taste.
So, season your ground sirloin with Salt and Pepper and nothing else. Then I used a rolling pin to get the burgers nice and thin but no too thin. Next you need a smoking hot grill pan. These burgers only took about 2 mins per side. That’s how thin they are. The buns were traditional white fluffy butter buns, not toasted. Sharp cheddar cheese. Slice vidalia onion or other sweet onion pretty thin. Add a little Mayo (real mayo please-no low fat) ketchup, lettuce and pickles and you are ready to go.
They turned out pretty good. Not Duffy’s but it will have to do until I can hop on a plane and get back down there!! Tom thinks we should name it the Mill Valley fog burger. Here are some pics:
There are a couple of other burgers I am thinking of as well. One is Dave’s ground flank steak and argula burger and one is Jesse’s beet burger. But since neither of those is my recipe I have to ask those guys if it is ok to share. So until next time….those are my burger thoughts of the day.
