18 Aug Breakfast for Dinner
Sometimes you just want breakfast for dinner. There are times when scrambled eggs with cheese and a little side salad, or a bagel with cream cheese or even cereal sounds like the perfect thing for dinner. I do breakfast for dinner quite often. There are so many varieties and endless ways to change it up. Also, I always have eggs on hand and usually veggies or lettuce or something easy to serve on the side. It is quick and easy and satisfying comfort food.
Tonight I whipped up the old famous “eggs in the hole”. I used to love this when I was a kid. We had a neighbor who my siblings and I affectionately called “Grandma Green” because she lived in a green house and was very grandmotherly. My little sister Kate thought up this name for her and it really stuck. Anyway, Grandma Green used to make us eggs in the hole for breakfast all the time. We would spend mornings at her house quite often, if we were sick and had to miss school or just to visit.
I had not had this breakfast for many years and my sister-in-law Dawn recently reintroduced it to me. I have found that it really satisfies when you are in the mood.
Here is the recipe:
- 2 pieces of bread (whatever kind you like) cut a hole out of the center
- 2 eggs
- Butter-softened to room temp
Butter both sides of bread. In a very hot non stick skillet add buttered bread. Crack an egg into the hole in the bread. Sprinkle with S&P. Wait 2 minutes and flip. Wait 1-2 more minutes depending on how you like your eggs and remove from skillet. Top with the toasted cut out hole and serve with bacon, hot sauce, salad or whatever you like. Enjoy.
