Happy New Year! Here we are already the end of January almost 1 whole month into 2011. I can’t believe it. January. The dead of winter, the month when we are all trying to stick to our New Year’s resolutions. It’s cold and dark and the day is over before you know it. It’s the kind of time when you really want comfort food.
Last night I made yummy delicious roasted veggies topped with a light shaving of parmesan cheese. It was so good and so quick and easy. It met my requirements for comfort food but it was also really great to eat and will not put the pounds on ya!
This would make a great side dish but I ate it for my main.
Roast Fennel and Cauliflower with Parmesan Cheese:
2 fennel Bulbs-leaves cut off. Cored and cut into large chunks
1 head of cauliflower-cut into florets about the same size as your fennel bulbs
Pre Heat Oven to 450
Place your veggies on a baking sheet and drizzle with olive oil.
Roast for 15-20 minutes
When done sprinkle with sea salt and grate fresh parmesan cheese over your veggies.
