13 May Just a nice light thing to eat…
My cousin who is a professional pastry chef was recently visiting me. In addition to the marathon baking sessions we did, I swear, non-stop baking for 2 days, we ate pulled pork, beans, tacos & homemade pizzas. Also, my cuz taught me how to make croissants from scratch. Not the easiest thing to do nor is there an instant gratification factor. You work hard and wait long for the well worth it results. The results were soooo worth waiting for, both the traditional and chocolate. We ate those too. Then there were the flaky fruit filled delights sent by my cousin’s wife who just started a catering business. The Fig and Pistachio Rugelach were my personal favs but there were several delicacies to choose from.
Anyway, after all this excess I needed something light but satisfying to eat and snack on. I decided on fruit parfaits after a visit to the local store yielded a bonanza of fresh produce.
I cleaned & diced all the fruit and I was left with a veritable cornucopia of delight. All I needed to do was whip up and flavor some fresh cream, layer in a glass dish and refrigerate and voila! a wonderful snack, dessert. I highly recommend buying fresh fruit and dicing it yourself rather than buying pre-sliced fruit. The fresh fruit that you have to cut up yourself just tastes so much fresher.
These were so refreshing and great to have around in the fridge. They lasted for about 5 days. I will be eating different versions of this all summer.
This time I bought all the fresh fruit that was in season and flavored my whipped cream with about 1 tbs vanilla and 1 tbs granulated sugar, it wasn’t too sweet at all. Just right. Also, next time I think I will add in some walnuts or pecans.
