26 May My Summer Sandwich
I have been lax about blogging lately. I know I have. I wish I could say there is a good reason for this but I’d be lying if I said that so I’ll just own up and say I’ve been lax because I’ve been, reading, surfing (only the web sadly) and yogaing. In no particular order. In short I’ve been selfish and just doing what I want to do.
I have been spending a lot of time browsing this site Pinterest which is a kind of pinboard of things that people tag from all around the web. It has design pins and fashion pins, food and music and book pins and a whole lot more. It is pretty easy to get lost in this pinterest world and waste a lot of time. Here are some of my pins, in case anyone is interested.
Anyway I was on Pinterest, I think, when I spotted this delicious looking sandwich that someone had pinned, white bean spread, avocado and sprouts. Looked good so I thought I would make one.
I am now addicted to this sandwich and will be eating versions of it all summer long adding heirloom tomatoes, spring onions etc… Oh boy this is a delicious and fulfilling sandwich. Please try it. I guarantee you’ll be coming back for more!
First make your white bean spread. I used a can of Great Northern beans because that’s what I had but any beans would work great. I can see making this with leftover Black-eyed peas in my future.
Ingredients Bean spread:
1 can of white beans
2-3 garlic cloves minced
Juice of 1 lemon
1 tsp Olive oil
Salt and pepper to taste
1 ripe avocado
Sprouts-any kind you like
Whole grain bread
Combine all Bean Spread ingredients in the food processor and mix until smooth.
In the meantime slice a fresh avocado in half and submerge in cold water to keep from browning.
Wash your sprouts.
Assemble sandwich and eat right way.
