Leftover Fingerling Potato Fries.
I had leftover fingerling potatoes that I served with Salmon the other night. It was a really good dinner, but that’s another blog for another day.
I had a hungry 4YO boy who wanted a hot dog and fries. Bingo. Leftover fingerling potato fries.
The night I served the salmon and fingerling potatoes I had parboiled and then roasted in olive oil a mix of purple and regular little fingerling potatoes.
They were sitting in my fridge, fat and cold when I decided to fry them up for my son.
I sliced them thin and then fried them in 2 rounds in a mix of canola and peanut oil and then sprinkled with a generous sprinkling of Diamond Crystals salt.
I am not kidding when I say these were the BEST fries ever. I am always, always going to make fries like this from now on.
The 1st time I fried them I don’t know what the oil temp was at, but it was on high medium for about 2 minutes and a drop of water sizzled in the oil for about a minute before I threw the fries in. Fried for about a minute then removed and did the second batch.
Then threw them in for another minute or 2 and they were perfect! This just reinforces my basic belief that anything fried is good. And if it is fried twice-even better!
