29 Jun Farro Pasta with roasted corn, braised leek and bacon.
So I haven’t updated lately. Sorry. I have been cooking and eating though so I have some things to share. The other night I was starving and it was a Sunday night and I had been lazing around all week-end and hadn’t planned dinner. I had, luckily, been to the market on friday and stocked up on fresh produce and fruit to lay in for the week-end. So lucky for me I usually keep a lot of grains and pastas on hand for the times when I need to throw something together quick!
A survey of my fridge presented, 2 ears of sweet white corn with husks, lovely fat leeks and some Hobb’s Canadian Bacon that just screamed “please eat me!!!”
I decided to braise the leeks in White wine, roast the corn and cook the bacon well and then add everything back to the bacon fat tossed with some farro pasta and a generous amount of grated pecorino cheese and black pepper.
Delightful. Hello summer….
