Tomato Jam-Breakfast Update

It had been suggested to me by more than one person that the Tomato Jam would be awesome with eggs. I am happy to now confirm that suggestion. Woke up this morning and was pleased to have all the fixin’s for a great breakfast sandwich:

Homemade amazing soft rolls provided by my cuz the Pastry Chef (AKA Jim)
Farm Fresh eggs (thanks Mill Valley Market)
Avocado (say no more)
Salt & Pepper
Butter
Olive oil
Tomato Jam

Fry your egg in Olive oil-salt it
Butter your roll and lightly toast it
Slather with Tomato Jam-be generous
Slice up your avocado and salt it

Put it all together and this is what you have:

    That looks awesome! Lora always looks at me funny when I put ketchup on my egg sandwich….this is the ‘high class’ version of that.
