26 Jul Don’t be sad that it’s Monday dinner
Monday’s are always tough. Even if I start the day out in a glorious mood, I can be sure that as the day goes on things can become trying. Today was no different. In fact my glorious mood lasted until approximately 9:30 and then all bets were off.
So….what to do. Well gather yourself up and make a fantastic dinner. Say goodbye to Monday and relax and enjoy the end of the day.
For my say goodbye to Monday meal I decided on Pan seared scallops, oven roasted cherry tomatoes and some leftover farro with roasted mushrooms and parmesan. It was delicious.
I feel much better. Ready for Tuesday.
Pan Seared Scallops:
Large Sea Scallops. Wash them to get all the sand and grit off.
Heat some olive oil in a pan. Add a pat of real butter. Do this over medium high heat so that it gets really hot, but not smoking. Add your scallops and make sure not to crowd them. They need space to sear properly. Salt and pepper to your taste. After about 1 minute flip over. Sear for another minute. Turn off heat and squeeze a fresh lemon over them. Leave over the warm burner for 1 minute longer to finish cooking.
Oven Roasted Cherry Tomatoes:
Pre-heat oven to 425.
Wash and stem 1 -2 cartons summer cherry tomatoes. Lay in a single layer on a cookie sheet. Drizzle with olive oil and a generous amount of course salt.
Roast for 20 minutes and then let sit for 10 mins or so before serving.
Farro with mushrooms and parmesan cheese.
I love this recipe and make it all the time. Make sure to add lots of fresh parsley. It really makes the flavors pop. You can fine the recipe on Food52.
