How to fry an egg-secrets will be revealed

Eggs are one of the most versatile foods. They are great for breakfast, lunch or dinner. In a pinch you can make a beautiful salad and top it with a perfectly fried egg, serve it with a crisp white wine and you have an elegant dinner.

I love a perfectly fried egg. I am surprised by the number of people who can’t fry an egg properly though. It is the easiest thing in the world.

Luckily for me, my grocery store, Mill Valley Market, serves farm fresh eggs from a local farm. I am so spoiled by this that I refuse to shop anywhere else for my eggs.

So, you start with your beautiful eggs:

Get your favorite non stick pan and put on a burner over medium high heat. I usually like to fry mine in olive oil because butter can get brown and then your egg gets kind of greasy.

Crack your egg in the pan and be careful not to break the yoke. Salt and pepper at this point. You are not in a hurry so let your egg fry over medium heat until it is pretty well set.

At this point, flip your egg, turn off the heat and let it sit for about 30 seconds.

You now have a perfectly fried egg. Serve over rice and beans, on a tortilla or just enjoy with toast.

    something so simple and yet so versitle—I think that is spelled wrong but I can’t come up with the correction! Dad always says “an egg is the perfect food”—including the much maligned yoke!
