18 Sep Block Party Salad
So my neighbors had a block party last week-end. The party was on Sunday afternoon and everyone was supposed to bring a dish to share as we mingled with old neighbors and met new ones. There’s something so comforting about a block party. It seems like everyone is so busy with work, and kids and after school activities these days that we rarely take the time to just relax with friends and neighbors. Everyone should get to know their neighbors,so thanks Gordon & Jane for hosting the party!
At our block party the food was great and the company was even greater.
My contribution was this easy Farro Salad:
2 cups Farro
4 cups chicken broth
4 Cups mixed mushrooms, I used chanterelles, shitake and baby bellas
2 Cups Arugula
2 Leeks, thoroughly washed and sliced
2 garlic cloves sliced thin
1 chunk Parmesan cheese
Cover 2 cups of Farro with chicken broth and bring to a boil. Simmer uncovered for about 20 minutes. Drain and reserve some of the broth.
Put Farro in a large shallow bowl.
Saute your your leeks and garlic in grapeseed oil over medium heat until soft but not browned. Remove to a bowl.
Using the same pan saute your mushrooms on medium heat until they start releasing their juices and remove to the bowl with the leeks.
Add your Argula to the pan and add some reserved chicken broth, saute until just wilted. Add the other vegetables back to the pan and give a quick sate until all are cooked perfectly. Add more broth or oil if needed.
Add the vegetables to the pan with the farro. Add S&P to taste. Using a knife chunk pieces of the parmesan into the salad. Zest the lemon into the salad. Taste. If needed squeeze some lemon juice over the salad. Serve at room temp.
